He who will not be limited to using grapes from one vineyard nor pinned by the rules and regulations of the varieties they grow…no, this man will move between regions seeking grapes where they love to grow, always focussed on the style of wine he is creating and choosing varieties that make fresh, unashamedly masculine wines with the right balance of feminine qualities.

We are thrilled to welcome you to “East Village Dining Room”

Located on the 1st floor just a short step away from the main bar.

Adam Spencer’s culinary talent will be augmented by the addition of David Pearce as our new restaurant manager, formerly of Attica in Melbourne, Jean George Vongerichten in New York and Banc in Sydney just to name a few.

Adding a new menu designed by head chef Adam to craft ales, cocktails and fine wine by David, you are all in for something very special. Think, seared hand dived Hervey Bay scallops and charred corn puree with Massena “The Surly Muse” Viognier from the Barossa or slow cooked Bangalow sweet pork, apple and fennel ‘coleslaw’ with Jean Claude Bessin Chablis Premier Cru or a melt in the mouth combination of our famous pea, ham and eggs over a glass of Gavi from Piedmont in Italy.

The East Village Dining Room will play host to Marcel Khoury’s ‘Somewhere in Sydney’, featuring reworked architectural drawings on mixed mediums. Opening night 16th November from 6:30pm Drinks and light canapés provided.

Dinner with the Artist Marcel will be hosting dinner from 8:30pm directly after the opening. Wine and Dine on a 3 course menu with matched wines for $75 per person. tickets available from the link below.

Hugo the Weimaraner, arguably Sydney’s most precocious pooch is a method actor extraordinaire. His repertoire will both amaze and delight you.

Hugo looks aloof and at home in his gourmet kitchen. There’s an air of excitement and wild abandonment in his scuba diving aquatic bath and the stance of cocky nonchalance is undeniable in his buffed and uniformed fire fighter’s guise.

He is a policeman you will definitely want on your side, an adorable day time soapy doctor who will save lives and break hearts and a jet setting businessman who only travels first class. And so much more…..

Hailing from the North of England, The East Village Head Chef Adam Spencer carries with him a slew of notable achievements and employment milestones across the UK and Australia.

This humble Yorkshire lad was head chef of Room by age 21, worked in five star establishments such as the likes of the Savoy and Iceberg, was instrumental in producing amazing cuisine experiences for 200 or more people in demonstrations alongside some of the world’s finest chefs in the UK and even found time to feed blue bloods as he worked at the prestigious Ascot Racecourse servicing the Royal Box.

Adam opened both the Leeds and Glasgow operations of Room, a playground bar and restaurant combo for the ultra trendy, and was awarded with two rosettes (the Australian equivalent of one to two hats). Having worked as Head Chef in the breathtakingly sumptuous Woodlands Restaurant in Leeds where top quality produce is a short walk from paddock to plate and setting Australia on fire in Melbourne as a guest star chef at the likes of LOST and Bluebottle, as Head Chef of The Australian Youth Hotel and Welcome in Sydney, and now as Executive Chef of the East Village Dining Room, Adam Spencer takes talents to exciting new levels with every dish.
